Bon Me Appetit #1 - How to make our Deviled Tea Eggs! 🍳

This week will be about How to make our Deviled Tea Eggs!
What you'll need:
2 cups water
2 Lapsang Souchong Tea Bags (or smokey tea)
1/2 cup soy sauce
1/4 cup sugar
1 to 2 tsp salt
1 bay leaf, dried (optional)
1 cinnamon stick (optional)
Pinch fennel seeds (optional)
Pinch anise stars (optional)
12 eggs, hard-boiled, peeled
As needed spicy mayo (1 egg yolk, oil, a dash of mustard and Sriracha)
As needed scallions, sliced, green parts only
As needed cayenne pepper
1 Boil water in a small pot, remove from heat and add tea bags. Steep for 5 minutes and then discard tea bags.
2 Add soy sauce, sugar, salt, bay leaf, cinnamon stick, fennel seeds and anise seeds and mix until sugar and salt are dissolved. Transfer mixture to a bowl or jar and refrigerate until cold.
3 Add eggs to tea mixture, ensuring they are fully submerged, and refrigerate for 2 days.
4 Right before serving your eggs, make the spicy mayonnaise! Emulsify 1 egg yolk with 1 cup of oil plus a dash of mustard and salt and add Sriracha to taste.
5 To serve, slice egg in half lengthwise and pipe a dollop of spicy mayonnaise on each egg yolk. Top with a couple of green scallion rings and a sprinkle of Cayenne pepper.
